Apple Oatmeal Cookies

This is an incredibly easy recipe for healthy, hearty autumn cookies.


The ingredients you need:
2 1/2 cups flour 
1 cup quick oats 
1/2 tsp salt 
1 tsp baking soda 
1 tsp ground cinnamon 
1/4 tsp ground cloves 
2 tsp lemon zest 
1 1/2 ticks unsalted butter at room temperature 
1 cup packed dark brown sugar 
1 egg 
1/2 cup unsweetened apple sauce 
1/2 cup honey 
1 cup apple, peeled, cored and finely chopped 
1 cup raisins

The tools you need:
measuring cups  
measuring spoons 
large mixing bowl 
electric mixer 
spoons for scooping dough 
cookie sheets

Preheat oven to 350 degrees

In a mixing bowl, combine flour, oats, salt, baking soda, cinnamon, cloves, lemon zest

In the bowl of an electric mixer, beat butter and sugar until light and fluffy

Add egg, applesauce, and honey and mix until well combined

5.

Slowly add the flour mixture, chopped apple and raisins and blend at low speed until just combined. Don't overmix!

Drop by rounded spoonful onto ungreased cookie sheets, about 1 1/2 inches apart.

7.

Bake for 17-20 minutes, or until bottoms of cookies are golden.
