Veggie Quiche

This colorful quiche is packed with good health and great flavor!


The ingredients you need:
One Pie Crust (Use the Easiest Pie Crust recipe on CookingWithCarrie.com) 
6 eggs 
2 cups flavorful cheese (I like fontina or cheddar) 
1 cup whole milk 
1 cup half and half 
1 tsp salt 
freshly ground pepper to taste 
1 cup broccoli, finely chopped 
1 cup fresh spinach, finely chopped 
flour for dusting work surface

The tools you need:
large mixing bowl 
measuring cups 
measuring spoons 
sharp knife 
cutting board 
deep dish pie pan 
rolling pin 
whisk

1.

On a lightly floured surface, roll out pie crust to about 1/8 inch thick

Carefully place the pie crust into the pie pan. Crimp the edges of the crust around the edge of the pan to make it look pretty and refrigerate while you make the filling

In a large bowl, whisk together eggs, milk, cream, salt and pepper

Stir in cheese and veggies

5.

Pour into chilled pie crust

Bake in a preheated 400 degree oven for 45-50 minutes, until center is set and knife comes out clean

7.

Serve warm or at room temperature.
